Quinoa, Black Beans, and Veggies

I made some quinoa for the first time ever today. It was so good! Here's the recipe and the pictures:

1/4 cup quinoa
1/4 cup black beans
1/4 cup tomatoes, diced
1/4 cup spinach, torn
2 garlic cloves, chopped
onions, diced
olive oil
avocado slices

Basically I boiled the quino until done. Then in a small pan with some olive oil I cooked the onions and garlic (I didn't use a lot of onions since I'm not a huge fan). Added in the rest until cooked and dumped it all in a bowl. Quick and easy. Plus, we had nachos the night before so I was using up the left overs. It turned out great.

Quinoa is great. I often get the Quinoa and Black Bean salad at the grocery store deli. Adding spinach would make it even better for you, great idea. The same deli just started offering a quinoa, sweet potato and almond salad that is pretty good.
