Easter

I just have to say how awesome I think my family is. They have all been very supportive of my choice to become vegan. My Dad and Sister requested vegan goodies and so far, they have loved them. My sister keeps going on about the brownies I made (from Vive le Vegan). She thinks they rock! I thought they were totally kick ass too. Yum-E! My Aunt even takes time to find me yummy vegan foods so I can eat something similar to the rest of the crowd at family dinners. This Easter was no exception. She went to he local natural foods store armed with a list. The store offered her help, ideas, and tips on how to make different things. She even bought egg replacer and the sales person explained how it works great is everything except brownies.

It did work really well. I bought some when I first became vegan 2 months ago and have yet to open it. My Aunt Annie made me some Oatmeal Cranberry muffins for dinner on Saturday. This went with the Texas Bean Bake (veggie baked beans 28 oz, 1 can red beans, 1 can butter beans, 1 lbs smart ground, 1/2 cup brown sugar, 1/2 cup ketchup, 1 onion diced, 2 tbsp vinegar, 1 tsp dry mustard. Bake at 350F until hot a bubbly) and steamed asparagus. I forgot my camera so no pictures at the first sit down. But I have left overs and I'll get some pictures when I eat it tonight at dinner.

Sunday morning for Easter breakfast she made me oatmeal (with rice milk), hashbrowns (with EVOO no butter, just chop uncooked potatoes & some onion, put in pan with EVOO and cook until tender, add salt & pepper to taste), and blueberry muffins. The muffins came from a better crocker cookbook, we subbed rice milk and used the egg replacer (sorry, I don't a have recipe). Everything tasted so good! Her friend Linda (who might as well be my Aunt too, I've know her my whole life) made a fruit salad that was really good! So I loaded up and left will a very full tummy! I'm just so lucky to have an Aunt and a family that has really taken to my veganism and are will to accommodate me. (Although there are usually a few jokes made, but nothing too terrible).

I still sleep with a stuffed dog. LOL and that's crazy-cool about your wedding! What fun!
