It can be served over rice, in a tortilla, with Rice Noodles, oh how about with Quinoa, yeah lots of things.
I had originally intended on taking pictures with all the above options, but I realized it would take me the better part of 2 weeks to do that (just so I don't eat the same basic food for each meal). So here's a picture of the ratatouille on a chiptole pepper tortilla. Searously yummy food!
Recipe:
4 cans chick peas
1 1/2 cup diced red onion
4 garlic cloves
1/2 cup diced orange bell pepper
2 14.5 oz canned diced tomatoes
2 tbsp apple cider vinegar
2 tbsp extra virgin olive oil
2 tsp agave nectar
2 tsp mustard seeds
2 tsp dried basil
1 tsp dried oregano
1/2 tsp dried rosemary
1 tsp sea salt
1/8 tsp allspice
