Veggies and Carbs
Bill and I made dinner Friday night to carb load for our race on saturday. It turned out really good! All we did was sauteed some green and yellow squash, onions, spinach, artichoke hearts, and added a can of diced tomatoes. Then we made some angle hair pasta to serve the veggies on. We also made some potatoes to also put the veggies on. Both were really good! This was a great simple meal that can be made quickly!
