Cooking Fool

I get in the mood to cook sometimes...and this is one of those times. I made cooked up some whole wheat pasta to eat with the Lentils, Tomatoes and Kale mix that I made earlier this week...it was good! I'm carb loading for my race this weekend, so my cooking is all carb related...


Then I baked the SGV Rosemary Lemon tofu. I used some of it for my pasta salad.

Recipe for Pasta Salad
1 box Whole Wheat Pasta
1 orange pepper, diced
1 small red onion, diced
1 zucchini, chopped
1 cup diced carrots
1 cup diced mushrooms
2 servings of Tastefully Simples Tomato and Garlic Pesto mix
Rosemary Lemon Baked Tofu




Doesn't it look yummy! Plus, it can be served cold or hot!
Then I made Fat Free Vegans Banana Coffee Cake to share with my teammates at our race this weekend. I sure hope they like it.
