Stew...and something sweet

I was productive today. I was waiting for the roads to dry out so I could go on a bike ride, but now another storm is coming. So I opted to cook while I wait. I made Quinoa Corn and Potato Stew from Students Go Vegan. I don't have my camera with me, so no pictures (I'm sorry!). But it's looks and tastes amazing. I recommend making it with red peppers and not green, they're just prettier. I love quinoa too, it's got a great texture and makes this dish very pleasing. Recipe:

1 tbsp EVOO
1/3 cup diced red onion
1/2 cup diced red pepper
1/2 cup quinoa, rinsed
1 cup water
1/4 tsp salt
1/2 tsp ground cumin
3/4 cup diced red potatoes
1/2 cup corn (i used canned, but frozen or better yet fresh would work)
cilantro and red pepper flakes for garnish

Saute EVOO, Onions, and Red Peppers until onions are translucent. Add quinoa and stir constantly for 3 minutes. Add water, salt, cumin, and potatoes. Boil, reduce to simmer, and simmer for 10 minutes. Add corn and continue cooking 3-5 minutes. Continue simmering until quinoa and potatoes are cook completely. Add a few tablespoons of water if needed to continue to cook until potatoes or quinoa are done.

Serve sprinkled with cilantro and red pepper flakes.

All I need to say it yum! This dish rocks!

I also made chocolate chip cookies from Vegan with a Vengeance (like I did at Easter). This time, instead of making "fun size" I made regular size cookies (about a tbsp scoop for each cookie) and I didn't bake them. They're in my freezer so when I get the cookie craving I can either eat some dough or pop a few in the oven. Cookies any time I want them...I can't believe it took me so long to do that!

Now, if the rain would just go away so I can go ride my bike!

Raw cookie dough in the freezer is a great idea! I always bake the cookies THEN put extra away for later.

I still don't know why I didn't think of it earlier, but I'm glad I finally did!
