I've been slacking on my foodie posts! I tried a new frozen sandwich from Kashi for lunch the other day. It's the veggie medley pocket sandwich. It's meant to be microwaved only and it turned out really good! Here's the beauty shots:
I also made some yummy pasta to get my carbs in for my mountain bike race last weekend. I made a simple veggie sauce to put on top of whole wheat thin spaghetti.
Recipe:
1 can fire roasted diced tomatoes
1/2 red onion diced
2 cloves garlic, minced
2 TBS EVOO
1 cup diced mushrooms
a few big handfuls of spinach, torn
Saute red onion and garlic in EVOO until onions are tender. Add tomatoes, mushrooms, and spinach. Cook until heated through. Serve over your fav pasta!
I also made FFV Apple Cinnamon Swirl Pancakes for my prerace breakfast...man, we're they tasty! I just ate them plain, but I bet they'd rock with some real maple syrup or maybe even whipped cream...did I mention I got a whipped cream charger? I need to make some whipped cream now. I'll work on that next week.

The Kashi sandwiches are new...I was actually looking for the Amy's Burrito's when I saw them. A really good find!
think i can somehow turn those cinnamon pancakes into cupcake form?

i've read about the veggie medley pocket sandwich but i have yet to find it! lucky you! the pancakes look yummy too :)
