For my husbands birthday back on August 15th (I'm such a slacker) I made him some Jelly Donut Cupcakes! He enjoyed them greatly and so did the few extra I took to work for my coworker and her boyfriend. I opted to kind of cut a hole in the top of the cupcake to put the jelly in after baking, since I didn't want the jelly to sink to the bottom. This worked well and once covered in powdered sugar you could hardly tell there was a whole. I did put the piece I removed back in to cover the jelly too. I made some with Strawberry Jam and others with Blackberry Jam, both tasted wonderful!

yummy! i've been thinking bout making these for a while now. they are MUCH more of a healthy alternative than the norm fried ones. yay! (that's wat i'll say to justify my eating of the whole batch when i do make them :)
