Eat Your Veggies Soup


I bought a bunch of veggies at whole foods the other day...so I made soup. Perfect timing on the soup too, since next week the temps aren't going to get out of the single digits!
I did go a little nuts and measured everything so I could actually have a recipe for you...
1 tbsp extra virgin olive oil
1 cup red onion, sliced
14.5 oz fire roasted crushed tomatoes
32 oz vegetable broth
3 cups red potatoes, diced
1 cup brussels sprouts, diced
1 cup carrots, diced
1 cup japanese eggplant, diced
1 cup celery, diced
2 cup spinach, torn
3 cups cooked chick peas

This soup tastes awesome, I'm going to have make this again, maybe with more veggies!
