Journal of a Vegan Foodie Day 1

Yesterday morning I woke up and did a strength training workout. I typically don't eat prior to this (since I wake up early and go straight to our home gym). So I did my workout (drank 1 water bottle of water) and then ate a yummy Clif Builder Bar in Mint Chocolate (with more water, I love water!). I like these bars because they are yummy, and full of protein!


Then I got ready for work and headed out the door. Once at the office I sat down to a nice cup of Green Tea with mint from Bigelow Tea (with a teaspoon of vegan sugar to sweeten it up a touch) and also a serving of Barbara's Bakery Shredded Spoonfuls. This cereal is awesome! I like the texture and the slightly sweet flavor. I'm not a huge fan of really sweet cereals and this does the trick. Oh, and yes, that's a Hardee's cup the tea is in. It's from my Grandpa who goes to Hardee's everyday for coffee with his friends and also again with his Nephew. He gave me a cup so I could be just like him...only I just drink tea and eat oatmeal out of it.
And a staple in my diet is oatmeal. I make my own "instant oatmeal", it's typically my mid-morning snack. I ate this while I listened to CNN for the Inaugration of our new President.

Lunch time came and my craving for a diet coke caved in. I cracked and had a Diet Coke along with my lunch. I'm testing out different mock meats and this week it's Tofurky's Hickory Smoked Tofurky. I had this on a sun-dried tomatoe tortilla along with spinach. I also enjoyed some baby carrots, edamame, and a very juice orange for the rest of my lunch. This was the first time I've had any Tofurky deli slices, I liked the hickory flavor of this one too. I think the texture is good too, not really rubbery like other deli slices can be. Then for a little sweet treat I had an Archer Farms Organic Fruit Medly bar, yum!


I love granola bars, they're like candy to me...so for my afternoon snack it was a Nature's Path Pumpkin Flaxseed bar.

I also do yoga on Tuesday nights so my preyoga snack was a yummy S'mores Luna Bar.


Dinner was A whole wheat pita pocket with sauteed red kale and spinach (seasoned with some curry and garlic powder), sliced tomatoes, and some baked tofu I made...recipe:

1 block firm tofu cut into 8 slices
1/2 cup water
3 tbsp soy sauce
1 tsp lemon juice
1 tbsp EVOO
1 tsp Chinese Five Powder Spice

Mix together in the baking dish and put slices in, flip slices to coat. Bake at 350 degrees for 30-45 minutes, flip and repeat. I covered them for the first 30 minutes to keep moisture in, then took the foil off for the last half.

The rest of dinner was some Alexia Crinkle Cut French Fries (yummy!!!) and a fruit cup of diced pears for dessert. I love canned pears for some reason, I just can't get into the really pears. I bite into them and think of mushy apples, it's weird. But, I'll have to give it a try again, it's been a few years since I had a fresh pear...maybe now I'll realize the pure joy a fresh pear can bring (or maybe I'll stick to my fruit cups!)

Tomorrow I'm having a root canal done in the early morning hours...I see lots of soft food in my future...either that or really small bites.

Oh, I almost forgot, sorry about the root canal. I hope that it is speedy and uneventful and your healing time is FAST!!!
