Sunday, the day of rest

I woke up and ate a whole wheat bagel with apricot preserves and a glass of green tea. Then I headed off to church.

After church I come home and had an orange and some Kashi Go Lean cereal as my morning snack.
Lunch was a repeat of dinner (after all, it's the day of rest!) it was still good the second time around, although, I'm totally craving more Indian food from the Taj Mahal! It was so good and I love Indian cuisine, I bet I dream about it tonight.



For the afternoon my husband and I headed out along the Lake for a ride. I took out my cross bike, the weather is "warm" compared to where it has been, so it was awesome to get out and ride some. The cross bike was used because the roads are covered in grim and I did not want a flat on my road bike, nor did I want to clean my road bike today. (The cross bike it's super nice, so I don't feel the need to actually wash it, just wipe it down, after riding out in the the winter grim).

Before our ride, I experimented and made chocolate bread pudding!

soaking the bread....it might not be "done" but it sure does look yummy before it goes in the oven.Recipe:

4 cups stale french bread, torn into pieces

3 oz semi-sweet chocolate

2 cups rice milk

1/2 cup apple cinnamon sauce

Heat up the rice milk on the stove until it's hot, but not boiling. Remove from heat and add semi sweet chocolate, stir until melted and combined. Stir in apple sauce and pour over the bread in a casserole dish. Stir the bread and milk mixture until it's mostly absorbed in the bread. Put in preheated 350 degree oven and cook for 45-60 minutes. Until the top if firm. Cool and serve warm. You can reheat it by either microwaving a portion or stick it back in the oven for 10-15 minutes. This serves 4 people, or two depending on how much sugary bready chocolatly goodness you want.

The ride made me hungry so I made a little bowl of popcorn and sliced up an apple, a yummy combo I must say. I'm saving the bread pudding for dinner dessert...it smells so good though!

Easy microwave popcorn....1 paper lunch bag and then put in 1 tbsp kernels, 1 tsp evoo, toss, and them staple the top shut (no, the staples won't spark in the microwave) and then microwave until the popping slows to 3-4 seconds (i think mine took 2 minutes), sprinkle with salt and enjoy!
Dinner was some Soy Ginger Baked tofu (recipe below) served with brown rice and a side the roasted brussels sprouts and turnips (I made a lot!). Dinner dessert...was of course, the super yummy Chocolate Bread Pudding....

Soy Ginger Tofu was super simple, just take a few slices of extra firm tofu, press them, and then coat with 365 Soy Ginger Sauce (I watered mine down a bit to get it to spread better) then bake at 400 for about 45 minutes. yum!

I know today is the "day of rest" but I was bored, so I baked, cooked, and rode my bike. I can't help it! On another note I have decided to give up honey. I'll eat the remaining foods I have containing honey (can't be wasteful after all and most of it is stuff my husband does not like) and I will go forward and not purchase any foods containing honey. I'm excited about this next step in my vegan adventure! And I'm sure finding some foods will be difficult and chances are I will be making my own bagels and breads....how fun!
