1 1/2 cup diced onion
1 cup diced bell pepper
1 1/2 cup diced mushrooms
5 oz spinach
1 tbsp olive oil
16 oz extra firm tofu
16 oz firm tofu
1/2 cup nutritional yeast
2 tbsp soy sauce
1/2 tsp turmeric
1/2 tsp pepper
2 tsp Dijon mustard
preheat oven to 350 degrees
saute onions and bell pepper until onions are soft
add mushrooms, cook 1 minute
add spinach, cook until wilted
drain tofu
in a large bowl mash the tofu until it resembles ricotta cheese
stir in spices
stir in veggie mix
spray a 9x13 dish with non-stick spray
press mixture into pan and bake until top browns (about 30 minutes)
Serves about 8 people...4 if you're really hungry people.
